Cha Hai or Gong Dao Bei can mean ‘sea of tea’ or ‘bowl of impartiality.’ During Gong Fu Cha, its purpose is to control the strength of the brew. After brewing the tea for whatever length of time in either a yixing teapot or gaiwan, the tea is decanted into a Cha Hai, from which it is distributed into individual teacups. This way, we can ensure that the tea leaves do not continue to steep between each pour. The Chinese name ‘gong dao bei’ or ‘bowl of impartiality’ references that each participant may enjoy the same brew.
